This is actually CoWorkerS's godmother's recipe - great freshly made, but even better the next day!
CAKE
2 cups sugar
2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
1 cup oil
3 cups grated carrots
4 eggs
(Chopped walnuts and raisins optional - I dont like 'em and neither does Eh Steve!)
Preheat oven to 350 degrees. Grease a tube pan. Sift the dry ingredients into a bowl, then add the oil and blend. Add the eggs and beat. Mix in carrots, then pour the mixture into the pan and bake for 1 hour. Frost cake when completely cool...
FROSTING
1 stick butter, softened
8 oz. package of cream cheese
1 box powdered sugar (10x)
2 teaspoons vanilla
Cream butter, cream cheese and sugar together until smooth. Add vanilla.


This is also the recipe your grandmother makes - her carrot cakes are legendary here in southern Illinois! I have made it with grated zucchini also and it is fabulous! I use finely chopped pecans - no raisins! UGH!
