You know how Starbucks will come out with some new, completely addictive syrup, and then it'll wind up being a limited-time-only thing and once your local store is out of their stock of it you're outta luck?
OK, maybe that just happens to me. But since they started the Cinnamon Dolce thing, I've been paranoid that it will be discontinued and I won't be able to get my Cinnamon Dolce fix... until now. I have concocted a triumphant substitute, suitable for use in regular coffee as well as espresso once I get through my current stock of ground coffee so I can put my regular coffeemaker away and set out the espresso machine...
Cinnamon Brown Sugar Syrup
1 cup packed brown sugar
1/2 cup water
1 Tablespoon cinnamon
1 Tablespoon butter
1/2 teaspoon vanilla
In a small saucepan, dissolve brown sugar in water and add cinnamon. Bring to a boil for 2 minutes. Remove from heat, add vanilla and butter and stir until melted.
I found some of those clear plastic squeeze bottles that chefs use for their sauces at Costco, so I poured my syrup into one of those (this recipe filled it about 2/3 full). After being refrigerated, the syrup congealed a bit and became difficult to squeeze out, but 15 seconds in the microwave on high was perfect to thin it again.
Oh, this is also FABULOUS over waffles instead of maple syrup. Try it, you'll see.
