This is another one of those cheap and easy recipes - and it includes beer, which is a plus for college students, right?
3 cups self-rising flour
1/2 cup sugar
12 ounces (1 bottle) beer
2 tablespoons melted butter
Preheat the oven to 375 degrees F.
Butter a loaf pan and set aside. In a large bowl, combine the flour, sugar and beer, and mix well. The mixture will be sticky.
Pour (or plop) into the loaf pan and bake for 52 minutes. Take out of the oven and brush the top of the loaf with the melted butter, then return to the oven for 3 more minutes.
Try this with different kinds of beer - my favorite so far has been Hornsby's Draft Cider, but there are so many different varieties to try... This makes a dense, cake-like bread with a bit of sweetness to it.
does it matter what the beer is, dark, light, bitter, etc. ?

Doesn't matter which kind of beer you use - they'll all be slightly different. And yes, cider does not equal beer, but Hornsby's draft cider is more of a "cider beer" - and it works like beer in this recipe. I haven't tried any other hard ciders with the recipe, but this one is more beer-like than others I've had, like Wyder's Pear Cider for instance. We used Pete's Wicked Strawberry Ale once, but the strawberry was so subtle you really couldn't taste it.
