Key Lime Cream Cheese Pie, to be specific. I took a few different recipes and combined them to make my own unique creation.
First, a pie crust. You can get a store-bought graham cracker crust if you want easy... or, if you really like a good flaky pie crust, try this one.
YUMMY PIE CRUST:
2 cups flour
2 Tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
3/4 cup butter-flavored Crisco
1 egg
1 teaspoon white vinegar
Combine flour, sugar, salt and baking powder in a medium bowl. Cut in butter-flavored Crisco with a pastry blender (much easier than a fork) - mixture will form small balls about the size of peas. In a measuring cup, lightly beat the egg with the vinegar, and add enough water to make 1/3 cup liquid. Add to the flour mixture... add more water 1 teaspoon at a time if necessary until the dough clings together. This recipe makes 2 pie crusts - separate your ball of pie crust dough and set one aside for something else yummy... then roll out your dough to fit in a 9" round pie pan. Prick the dough on the bottom of the pan with a fork a few times to keep it from bubbling up on you...
Heat the oven to 350 degrees and put the crust in for about 15 minutes. Meanwhile, you can make the next part.
CREAM CHEESE LAYER:
8 oz package of cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla
1 egg
Mix well using an electric mixer until smooth. Pour into the pie crust and bake at 350 for 20 minutes... While that's baking, you can make the key lime layer.
KEY LIME LAYER:
2 14-oz cans of condensed milk
1 cup key lime juice
2 eggs
Whisk together until well-blended (or use that electric mixer) and pour over the cream cheese layer until the pie shell is nearly full. There will probably be extra key lime filling - I adapted this recipe from one that does not have the cream cheese layer. But I filled my pie shell up pretty full, and there wasn't much leftover. Turn down the oven to 325 degrees, put the pie back in and bake for 15 minutes.
Let cool thoroughly - you may even want to refrigerate it before serving. Serve with whipped cream. (I didn't put the whipped cream on top before serving, because one of our singles group is not so much a fan of the "calf slobbers", as my dad would say.)
Ooooh Key Lime Pie! I doubt I'll be able to prepare this but reading the recipe's just satisfaction enough... for now!
